Today I would like to tell you about the volatile aromatics which are responsible for a good portion of the flavor of your coffee.  Volatile aromatics are soluble materials that evaporate easily.  They have boiling points that are well below water, and therefore evaporate from the surface of your coffee quickly.  When they evaporate, they take a lot of the flavor with them.

If your coffee is sitting on a burner in a coffee pot, these aromatic flavors are gone within 20 minutes.  If coffee is kept in a container where the pressure can equalize, the process of this evaporation is slowed, and the flavors will hold for 60-90 minutes.
